Easy Breakfast-in-Bed Recipes for Mother’s Day at the Campsite

For many of us, breakfast in bed is an ideal Mother’s Day treat. But what if you’re spending the day camping in your diesel pusher, tent trailer, or other RV? Don’t worry, it’s still totally possible to make breakfast-in-bed special for Mom! With a few modifications, you can use your RV kitchen to create delicious breakfast recipes and still pamper Mom in the comfort of your campground. In this article, RVT provides recipes and ideas to help you make breakfast-in-bed for Mother’s Day a reality. So get ready to show Mom some extra love this year!

Breakfast Skillet (vegan and vegetarian options)

Breakfast skillets are a simple and delicious meal that always feel a bit more gourmet. There are many ways and options when making these, but it is always recommended to start with your favorite potatoes and either roast or sauté them until they start to become crisp. Add additional vegetables, such as bell peppers, onions, jalapenos, or even zucchini or summer squash for flavor and additional texture.

Meat eaters can also add a cooked meat option (cook it on the side separately and mix in at the end), such as bacon, breakfast sausage, ham, or chorizo. Finally, be sure to either mix some cheese in once the potatoes and vegetables are fully cooked, or even sprinkle it over the top. When serving your breakfast skillet, top with over easy or over medium eggs, and add your favorite toppings, such as salsa, sour cream, avocado, and hot sauce.

Gourmet Oatmeal (vegan and vegetarian options)

Oatmeal is another meal that can be made in a variety of ways and flavors, and it can be made for one or for a whole crowd. Start by cooking your oatmeal in a pot on the stove, adding 1/2 cup of oats and one cup of liquid (water, milk, oat milk, almond milk, etc) per person to a pot on low heat. Heat this, stirring frequently so that it does not stick. Once cooked, sprinkle in a dash of salt, and turn off the heat. 

Add a variety of toppings to achieve different flavor combinations, such as sliced berries and cream, bananas with honey, walnuts, and cinnamon, maple syrup and brown sugar with pecans, or even chocolate peanut butter (add cocoa powder, peanut butter, and chocolate chips). Mom is sure to love this hearty and filling meal!

Veggie Frittata (vegetarian)

Veggie frittata is another simple recipe that allows for a lot of customization. Start with your favorite veggies, including options such as onion, zucchini, squash, bell pepper, tomato, corn, spinach, or whatever else you have on hand. Sauté these in a pan on low until they start to brown. 

Preheat your oven to 350 degrees and whisk 10 eggs with your favorite spices in a bowl on the side, adding in 5-7 tablespoons of your dairy option of choice, such as sour cream, heavy cream, milk, half-and-half, or even mascarpone cheese. Pour the egg mixture over the vegetables, and stir in some cheese. Allow to cook on low until it starts to set, then slide it into the oven for the last 20-30 minutes of cook time. Be careful not to overcook!

Peach Cobbler Cinnamon Rolls (vegetarian, or vegan with substitutions)

Peach cobbler cinnamon rolls are a great upgrade to your standard breakfast cinnamon rolls, especially for Moms with a sweet tooth! Start with either fresh or canned peaches, making them into a syrup on the stovetop by adding in sugar, flour, and a pinch of both cinnamon and nutmeg. Pour them into a greased baking dish, and top with quartered cinnamon rolls. Bake covered on 350 degrees for 20 minutes, then uncover and bake for an additional 20 minutes or so, or until your cinnamon rolls are a golden brown color. Serve with glaze on top. These can be eaten either as a main course or as a side or dessert with breakfast.

Eggs-in-a-Basket

Eggs-in-a-basket are a classic breakfast staple that are easy to cook and always feel pretty special. Start by gathering a couple of slices of bread per person and buttering each side of each slice of bread. Next, cut a hole in the center of each slice. You can do this using a glass for a circle hole or a variety of cookie cutters, such as hearts, flowers, or whatever Mom likes, for a more cutesy feel. 

Turn a pan on low heat, and add a slice of toast, letting it cook for about a minute before cracking an egg into the center hole. Sprinkle your egg with salt and pepper and flip once it starts to set and cook, letting the opposite side cook as well. Don’t forget to cook the pieces you cut out of the bread as well, these are great for dipping in your runny yolk!

Breakfast in bed is a luxury treat that Moms really love on Mother’s Day, and there’s no reason to do without, even while on a camping trip. Be sure to add some sides such as sliced fruit, toast, or breakfast meats, and don’t forget the coffee and juice.
